The IM200 Professional Sharpening System is great for producing and maintaining really sharp edges on all your cutlery. This device is a household version of Norton's famous IM313 sharpener which has been the sharpening standard for professional chefs for over 80 years. Its coarse stone is fast cutting for repairing damaged and severely dull edges. The medium stone sharpens dull edges quickly and upgrades the finish left by the coarse stone. The fine stone provides an excellent edsge for most food preparation requirements and should be used to maintain your edge on a regular basis.
The IM200 Professional Sharpening System uses a bath built into the base to keep the sharpening stones coated with lubricant. Sharpening is faster and easier when lubricant is sitting on top of the stone. Lubricant prevents loading and glazing. Rotating the stone through the bath puts just the right amount if lubricant on the sharpening surface. This means consistent performance and less mess. Water or light weight mineral oil can be used as a lubricant.
The center section contains three, replaceable, 8 inch long by two inch wide stones held in place by stainless steel clips. It is easy to rotate, allowing the user to position and lubricate the desirted stone.
The attractive sharpener base and cover are made from a rigid injection-molded plastic for durability and impact resistance. Non-slip feet help keep the base secure on your counter top when sharpening, and slots in both ends of the base position the desired stone in the sharpening position.
Four ounces of pharmacopoeia grade mineral oil is included to fill the oil bath. It meets FDA requirements for use near food products.
